In order to form gel matrix, kappa carrageenan is hydrated at high temperatures first and then in the temperature ranges of 40–60 C it forms gel textures. The carrageenan gels will be weak or will lose its strength at pH ≤ 4.5, and the gel strength will become significantly decrease at high temperature and at low cation levels.
The gels with oil obtained without addition of lecithin (O-10 rpm) and control agar gel (Figure 1a) are characterized by a high value of G′ modulus (4500 Pa) at a wide range of frequencies. Application of lecithin causes a decrease in storage moduli G′, to values lower than 200 Pa ( Figure 2 a).
